A long standing love of the natural world led Chef Alex into wild cuisine meeting with Robin Harford and then Ffiona Campbell opened his eyes to what was missing from life, a personal connection with nature, he started working alongside an ancestral skills school, Native Awareness, where he learnt - and then went on to teach - game preparation and wild cooking, amongst other things. Alex then moved onto The Bell at Cropthorne, where he used his knowledge to craft a menu focused on the wonderful local game, plus foraged wild food elements, before further extending his skills at Holland House, where he became deft at multiple preservation techniques as a way of making full use of the bounty its kitchen garden provided.
Foraging for the past 15 plus years has provided Alex with a wealth of knowledge in the field and expertise in the kitchen.
Growing on Forage and Feast events where he collaborated with Rob Gould, Cotswold Forager, Alex is now running foraging walks and fermentation classes at The Fold, Bransford and has undertaken a study, The Wild Biome Project, where he as one of 26 professional foragers are eating only wild food for up to 3 months.

I'm yet to find a ingredient that, with a little salt, time and the right set of conditions, can't be elevated to epic heights with lacto fermentation, its possibly the easiest form of food preservation.
